Recipe! Tofu Mango Pudding

Tofu Mango Pudding

1 block mori-nu silken tofu — soft, well drained
1 mango
5 packets splenda or agave nectar
Cinnamon

Combine tofu, mango and sweetener of choice in blender.  Transfer to plastic container, cover and pop in fridge for a couple of hours or freezer for 1 hour.  Spoon in dessert bowls (4) and sprinkle with cinnamon.  So good!!

*Try it with your favorite fruit.  Just replace the mango.  I’ve also made with mango and strawberries and it was rockin’!

Bento #23 – Inarizushi

I’m tired after making this one!  First time making Inarizushi and it was so easy with the frozen wrappers.  Made my second batch of sushi rice for the filler and it came out perfect… think I have my technique down.  The Okinawan potatoes make an appearance for the second time.  Still good but need to think of some other things to do with them other than just the balls.  Also first time trying the dried rambutan.  I picked it up at Trader Joe’s yesterday thinking I’d give it a try.  It’s not as sweet as I’d expect.  It’s different, can’t really explain it.  Maybe it’ll grow on me!

Box 1:  Dried Rambutan, strawberries, Okinawan potato balls, Inarizushi, bear sauce holder with soy sauce.  Box 2:  Broccoli stalk kinpira, carrot sticks, grapes and bear egg.  450 calories.

Bento #22 – Fake Curried “Chicken” Salad & Pasta Salad

Popped into the Asian market this morning and grabbed these kumquats. If you’ve never had them before, they are similar to an orange however they tend to be a little bit more sour. No need to peel either, just be careful of the seeds inside.

Also have fake chicken salad in there.   So super easy to make.  (Go to recipe.)

Recipe! Fake Curry Chicken Salad

There is no way you can screw up this recipe.  I’ve made this long before I was a vegetarian and I make it different each time.  Keep tasting it as you’re making it and add anything that you feel might fit!

Fake Curry Chicken Salad

You’ll need:
Seitan or other mock chicken
low fat mayonnaise or vegan mayo (to taste)
curry powder (to taste)

Optional:
Red grapes
Green onion
Cashews
Salt
Pepper
Watercress

Mix all ingredients together and chill for at least 1 hour then serve on bread, wrap or on a bed of lettuce.  YUMMY!

Bento #21 – Bunny Egg and Mini Egg Rolls

Today’s Bento Lunch. Still need to get some extra large eggs for those molds!! Tried to spruce up my wabbit with some nori, but he kinda looks worse.

Crazy for kabobs.  I got a little “skewered” away here.

Salad with lowfat italian dressing, meatless italian sausage and yellow pepper kabob, fruit kabobs, pretzel sticks and celery with PB2/Cream Cheese dip, almonds and yogurt raisins.  450 Calories.

Sunday night… SUSHI!

So I tried for the first time to make sushi.  I was slightly askerred but I did a bunch of research and just dove in.  Everything turned out brilliantly!  My biggest worry was the sushi rice.  It ended up being perfect.. well as perfect as it could be for someone who didn’t train for ages on just making rice.  Of course, it was all vegetarian.  Pete was going to get tuna to put in his but he didn’t know exactly what type to get so decided to just suffer with only veggies.  Boohoo, Poor thing!

Bento #18 – Vegetarian Noodles & Bear Egg

Used my new egg mold today.  Supposed to be a bear but didn’t come out great… thinking I need some bigger eggs.
